Cela a un effet direct sur leur comportement dans le tractus gastro-intestinal. Les acides forts donnent &lsquo;volontiers&rsquo; leur mol\u00e9cule H+, acidifiant ainsi leur environnement. Cela se produit en partie dans l&rsquo;eau \u00e0 laquelle ils sont ajout\u00e9s et en partie dans l&rsquo;estomac. Les acides faibles, en revanche, conservent une partie de leurs mol\u00e9cules H+ et peuvent donc encore acidifier activement dans la premi\u00e8re partie de l&rsquo;intestin gr\u00eale. Les acides organiques non tamponn\u00e9s ont tendance \u00e0 se dissocier plus fortement que les acides tamponn\u00e9s.
