Mais comment savoir, ou plut\u00f4t mesurer, dans quelles exploitations ce probl\u00e8me se pose, dans quelle mesure la salmonelle se manifeste et peut-\u00eatre surtout : d&rsquo;o\u00f9 vient la salmonelle ?Apr\u00e8s tout, la solution se trouve souvent \u00e0 la source. Aux Pays-Bas, la surveillance de la salmonelle se fait au moyen d&rsquo;\u00e9chantillons de sang. Tous les 4 mois, 12 \u00e9chantillons de sang sont pr\u00e9lev\u00e9s dans chaque exploitation sur la cha\u00eene d&rsquo;abattage. Ces \u00e9chantillons de sang sont ensuite soumis \u00e0 une mesure de DO, qui exprime le niveau d&rsquo;anticorps dirig\u00e9s contre la salmonelle comme mesure de la contamination dans une valeur de DO (%). Plus la valeur de DO est \u00e9lev\u00e9e, plus les anticorps contre la salmonelle sont pr\u00e9sents dans le s\u00e9rum sanguin. Elles ne permettent jamais de d\u00e9terminer si un animal est malade ou s&rsquo;il excr\u00e8te Salmonella de fa\u00e7on infraclinique. Il n&rsquo;y a pas de statut SPF pour Salmonella, ce qui signifie que nous g\u00e9rons. Cependant, des \u00e9chantillons environnementaux peuvent \u00eatre utilis\u00e9s pour fournir un aper\u00e7u du statut de Salmonella dans une ferme. Cette m\u00e9thode n&rsquo;est pas quantitative non plus, mais elle montre o\u00f9 se trouve la source.<\/p><p>La salmonelle peut \u00eatre partout. Les personnes, la vermine et les porcs, mais aussi les chiens ou les chats dans une ferme peuvent tous \u00eatre porteurs de Salmonella et provoquer une introduction. La salmonelle peut \u00e9galement vivre et survivre dans les \u00e9tables, les outils, l&rsquo;\u00e9quipement, etc., ainsi que dans le fumier. L&rsquo;introduction peut \u00eatre \u00e9vit\u00e9e par une bonne hygi\u00e8ne de la ferme, notamment par le contr\u00f4le des visiteurs, l&rsquo;hygi\u00e8ne de l&rsquo;eau et de l&rsquo;\u00e9table et par un bon contr\u00f4le des ravageurs. De plus, les facteurs de gestion de la ferme tels que le d\u00e9placement des porcelets dans la maison de mise bas, le m\u00e9lange des porcs \u00e0 viande, les itin\u00e9raires de promenade, les v\u00eatements sp\u00e9cifiques au d\u00e9partement, etc. jouent \u00e9galement un r\u00f4le important. Enfin, les acides peuvent contribuer \u00e0 la gestion de la salmonelle, tant via l&rsquo;eau potable que via l&rsquo;alimentation liquide.
